Lemon Ricotta Cookies

There are some that feel lemon recipes are only good in summer, but I’m not certainly not one of them. I think making something with lemon helps it feel like summer! Don’t you agree? If you so, I think you’ll enjoy the following recipe.

What an interesting combination this recipe from Giada De Laurentiis is. It combines lemon with ricotta cookies. I love lemons so I gave it a shot, and have to say it has a very interesting flavor. The cookies have a nice heavy feel but aren’t soggy. The glaze, however, is the real star of this cookie. It’s light and adds the perfect amount of tang.
